How do you define an American Champion in cheese? One way of doing that is to select those cheeses that received the title "Best in Show" at one of the American Cheese Society’s annual conferences. This is a tough competition; each year there are thousands of entries, the cheeses are blindly judged by people who possess the utmost levels of expertise, ethics, and reliability. The cheeses are judged for for their achievements in flavor, aroma, texture, and appearance.
Our American Champions Collection contains the following: Cabot Clothbound Cheddar (8 oz.) - a rich and caramelly Vermont cheddar, speckled with bits of crystalline crunchy goodness. Dynamic and delicious. Harbison (5 oz.) - a soft-ripened cheese with a rustic, bloomy rind, wrapped in strips of spruce cambium, the tree's inner bark layer, harvested from the woodlands of Jasper Hill. Pleasant Ridge Reserve (8 oz.) - an aged, alpine-style cheese; rich and salty, with a long, fruity finish. It's a must-try. Red Hawk (8 oz.) - an organic washed rind triple cream; savory and rich, with notes of cured meats, roasted peanuts, and ocean brine behind the pungent funk.
