Shropshire Blue had never been made in Shropshire. It started out as a Scottish attempt to replicate Stilton cheese but with a subtle twist of adding annatto to the milk to give it an orange hue. Now most of the Shropshire Blue is made by 4 of the Stilton Dairies and keeping with the process that made it a real stand out.
The result is a semi-soft, slightly crumbly blue cheese with a glorious contrast of colors between the orange hue and the delicate blue veining. Shropshire blue has a sharp, strong flavor that takes between 6-8 weeks to mature.This celebrated cheese has won many medals including silver at the 2014 World Cheese Awards.
If you like Blue Stilton, you need to give this gourmet cheese a try; it is quite the statement on a cheese board. Pair with porters and stouts and always the perfect finish with a pinot noir.
