This 3 year old Black Creek Cheddar is born in Wisconsin's Fox River Valley, an area known for its rich pasture. Black Creek Certified Master Cheesemaker Greg Palubicki oversees production of the cheeses at the plant, where he's worked for more than 30 years.

The cheddars are make if into 40 lbs. blocks, then carefully aged for at least three years and then cut in smaller 7 oz blocks

Three years of aging, and this orange-yellow colored Black Creek Cheddar has become very firm and dense. The flavor is balanced, a little salty and almost bitter in its mouth-puckering sharpness, which is intense and lingers for a long time.

Pair it with a brandy, a Zinfandel, a Rioja or a porter.
