This cheese is a treasure, made in the Tennessee mountains by Sequatchie Cove Creamery. Modelled after Morbier, a French cheese with the distinctive black line through the center, Coppinger is an American version. 

Made with raw milk and aged until smooth, this cheese is semi-firm and has that classic line of ash running through the middle. The flavorless ash is added for appearance and tradition's sake these days - you won't be able to taste it. 

The cheese has the flavor of smokey meat and grass, but is relatively mild. An American showpiece, this cheese is perfect for an elevated cheese board. Try it with stouts and ales, light-bodied red wines, charcuterie or fruit and jam. 

We hand-cut and wrap this cheese in wedges of 1 pound and 8 ounces and you can also purchase an entire wheel of approximately 3.5 pounds.
