A true delight from Indiana, Foxglove is one of our favorite new American cheeses. Made by Tulip Tree Creamery, this washed rind cheese offers some funkiness balanced with double-cream richness. Imagine a very buttery brie but with a fermented note of fruit and a salty funk. When young the interior is dense and semi-soft. As it ages, it becomes very soft and pudgy, and easily spreadable.
A true showpiece on a cheese board, Foxglove should be savored slowly with a complementing beverage.
