Green Hill is a Camembert-style double-cream cow's milk cheese, made in Georgia. It's Sweet Grass Dairy's soft-ripened flagship that is aged for about 2 weeks. The cows who provide the milk for this cheese graze outdoors year-round, so the paste has a lovely yellow glow and you may be able to actually taste the season of each cheese.

Each small wheel with has a beautiful thin and white rind and is individually handcrafted and hand wrapped after ripening. This gourmet cheese is a multiple winner at the American Cheese Society Annual Conference.

Green Hill has a silky texture and tastes like sweet butter and popcorn linger. It pairs well with sweet preserves, honey, fruits, and nuts.

As for drinks, a variety of white wines will pair well, Chenin Blanc, Riesling, or bubbles like Champagne, Cava or Prosecco. Beer drinker will enjoy it with Pale ale or IPA.
