To create Griffin, Sweet Grass Dairy owner and cheesemaker Jeremy Little soaked their Thomasville Tomme cheese in Terminus Porter from Gate City Brewing in Roswell, Georgia and a rustic farmhouse-style firm cheese came to life.
Griffin is made in the style of a french farmhouse cheese and is aged for 120 days, resulting in a cheese with a rind that is generally dry and smooth with an off-white to beige to light orange color with speckled, random-colored surface flora ranging from black and brown to blue and gray. When the cheese ages, the texture dries a little and become crumbly and the rind can become a little sticky. When a cheese get older, aromas of malt, earth, maple syrup, and coffee beans intensify.
Flavors of this great Georgian cheese range from malt, hoppy, and brown sugar to notes of bitter cocoa and hazelnuts as the finish.
We hand-cut and wrap this cheese in wedges of 1 pound and 8 ounces and you can purchase an entire wheel of approximately 7 pounds.
