Mont Idyll looks like a beautiful French Valencay cheese, but it is made right here on US soil in Northport Michigan by Idyll Farms. They makes some incredible goat cheeses and these little pyramids are a perfect example.
This mountain shaped, soft-ripened cheese is made with goat's milk and delicately painted with vegetable ash, giving these cheeses a beautiful grey contrasting delicate rind. They are aged for 12-21 days before they leave the farm.
Because it is aged, it's not the same type of goat cheese that you find in the traditional goat logs. Ageing firms up the cheese a little, giving it a slightly 'aged' flavor.
You can imagine how impressive this award-winning cheese is on a cheese board.
Pairing with a Sauvignon Blanc, Chenin Blanc, a rose wine and serve with pickles, honey, nut or apple, and pears.
