This fantastic Raclette is made by American cheesemaker Spring Brook farm, located in Reading, Vermont. One of the only domestic Raclettes, this easy melting cow's milk cheese is washed with saltwater brine in the aging process of 3-4 months. With a nutty, creamy flavor with grassy, floral overtones, this is truly a wonderful cheese, with a complex, sophisticated flavor that rivals the best European Raclettes.
We hand-cut and wrap this cheese in wedges of 8 ounces and 1 pound and you can purchase and quarter wheel of approximately 5 pounds.
