An incredible centerpiece to a cheese board, but equally suited to presenting on it's own, Rocket's Robiola from the artisan cheesemakers at Boxcarr Handmade Cheese in Cedar Grove, North Carolina. Made in the traditional Robiola style, the small, square form is covered with a light dusting of vegetable ash before aging, which develops into a light grey, wrinkled rind that is beautiful to behold. When young, the flavor is tangy and bright, similar to yogurt, but with each passing week becomes more fluid, and develops notes of toasted almonds and roasted mushrooms. A true work of art from one of the rockstars of the new American cheese world.
