This flagship Gouda cheese Reypenaer V.S.O.P. is the pinnacle of Dutch cheese making. Based on centuries of tradition, Reypenaer uses traditional methods to produce this masterpiece 2 year aged Gouda. Over the long aging process, in which the cheese is stored in the aging rooms that have been in operation for over 200 years, the cheese starts to develop crystallization of the proteins and minerals inside.
This produces delightful crunchy crystals interspersed throughout the paste, and due to the cheese actually losing around 25 percent of its original weight, the flavors are concentrated into a tangy, sharp yet still creamy cheese that you will dream about having again.
We hand-cut and wrap this cheese in wedges of 1 pound and 4.7 ounces or a quarter wheel of approx. 5.5 pounds.
