This mountain style cheese is so good because it balances so many flavors at once. It's savory and meaty, like chicken broth. It's also nutty and rich, with creamy buttery flavors. A slight fruity sweetness adds another layer of perfection. Notes of grass shine through as this cheese is made in huge wheels in the French Alps, as it has been for centuries.
Very similar to Gruyere, which is the Swiss version of the same cheese, Comte is firm with a medium strength of flavor. This 12 month aged version is wonderful bite-to-bite, but also a champion melter. Serve on a cheese board to impress your people, or add to a comforting dish where this cheese will really impress when hot.
