Fourme d’Ambert is one of the most ancient cheeses we know of. Pronounced 'form dahm BEAR', these wheels have been made for thousands of years in France. A country blue, Fourme is less sharp than American blues and more balanced. It has earthy notes, a buttery flavor, and a smooth and subtle spiciness.
It can be used most places blue cheese is called for, and will be particularly appreciated by blue lovers when served on a special cheese board. It should be served with fine French wines - think whites or light to medium reds.
We hand-cut and wrap this cheese in pieces of 8 ounces and 1 pound, you can also purchase an entire form of approximately 5 pounds.
Ingredients:unpasteurized cow's milk, salt, animal rennet, lactic starters, penicilium roqueforti.
