Florette is a classic French brie with a twist: it’s made entirely from goat’s milk. That difference might seem subtle but it has a major effect on the cheese.
Goat’s milk is much lighter than cow’s milk as it has less butterfat. The result is a cheese that is more silky, and less buttery than traditional brie. It is flavorful with light clean flavors from the goat milk.
