Saint Nectaire is an ancient French cheese with a natural rind, made in the beautiful mountains of the Auvergne region. In France this cheese is typically made with raw milk, but in the USA we can only receive the pasteurized version.
This rustic cheese has a light pink or beige rind and a supple interior. Earthy and buttery, this cheese is markedly grassy with a hint of nuts and hay. When young it can be very mild, and strengthens as it matures.
We hand-cut and wrap this cheese in wedges of 1 pound and 8 ounces and you can purchase and entire wheel of approx. 4 pounds.
