Secret de Scey cheese has a natural brine washed rind and is matured for a minimum of 4 months. This rustic country style cheese comes from the gentle mountains in the east of France and is made with pasteurized milk instead of raw milk. This prevents it from earning the name Morbier AOC, however the recipe is the same.
The cheese itself carries a line of ash right through the middle, which represents two herd milking's per day: once in the morning and once in the evening. The morning milk is made into cheese and makes up the bottom layer, and the evening milk’s cheese makes the second layer. As it matures the cheese develops an ivory-colored semi-soft interior and mild creamy flavor.
Secret de Scey is a truly funky cheese with a pungent rind and bold flavor. The cheese is buttery, nutty flavor with hints of grass and leaves. The paste is semi firm, yielding and the mouthfeel is amongst our favorite, at first a little brittle then bursting with deep savory flavors. Try with crusty bread, fresh fruit, and perhaps a farmhouse saison.
We hand-cut and wrap Secret de Scey in wedges of 8 ounces and 1 pound. You can also buy an entire wheel of approx. 6.5 pounds
