Tomme de Savoie is made in the Savoie, a small French alpine region bordering both Italy and Switzerland. It's a raw milk cheese that has been lightly pressed for a semi-soft texture and aged from 2-4 months. The cheese has a rustic appearance and a distinctive powdery rind; it almost looks as if the cheese is dirty and has spots varying in color from grey to grey white. The inside is an ivory elastic paste with small eyes and the flavor is mild, citric, mushroomy.
