The Spotted Trotter was founded in 2009 by chef and butcher Kevin Ouzts in Atlanta, GA, featuring sustainably and locally sourced meats and ingredients like Sorghum Syrup, Pecans, Cayenne Peppers and sweet Georgia Peaches.
The Spotted Trotter aims to create a 'New American Charcuterie' featuring the flavors and terroir of the southeastern United States.
Trained at the fabled Napa Valley restaurant The French Laundry, as well as under the tutelage of Taylor Boetticher from The Fatted Calf, Kevin has an impeccable taste and grasp of the flavor balances that make his truly outstanding charcuterie shine.
