Spelt (triticum spelta) is considered an ancient wheat. According to history, spelt was an important crop in Europe during the Bronze and Iron Ages, spreading widely in central Europe.
Spelt is a whole wheat flour, and ground up with their outer grain layers and are fresher, but more prone to going rancid. We advise keeping the grain in the fridge once the bag is opened.
