Real barrel-aged feta is not so easy to find but this Aphrodite Feta, is a traditional Greek feta that is seasoned birch barrels which develops a rich, yet complex creamy flavor, is slightly tangy and firm but still crumbly. This cheese made with milk collected from small remote family dairies where their goats and sheep graze on the wild grass and herbs.

Because the barrels are not hermetically closed, small amounts of oxygen reach the curds and the natural flora in the wood helps to develop a unique yeasty aroma.

In this age, barrel-ripened feta is produced by only a handful of small dairies in Greece due to the extensive skill and expense involved in production. Each barrel is filled with curd by hand. After the cheese has been removed, the barrels are broken down stave by stave, washed and rebuilt by a skilled cooper. This is truly a 'slow food' - you can taste the difference.
