Pecorino Toscano DOP is an exemplary sheep’s milk cheese produced in Val D’Orcia, the province of Siena, Tuscany of Italy. The term Pecorino Toscano also has DOP status in Italy, meaning each cheese with that name is guaranteed to be made in the approved traditional way and in the appropriate region of origin. The 6 months aged version is firm, rich and nutty with a lingering finish hinting of butterscotch. At this stage of maturity, the cheese is hard with flavors that have become more concentrated with age.
Pecorino Toscano is a milder type of pecorino, not as bold as its cousins like Pecorino Romano. This version of Pecorino Toscano instead is nutty and slightly salty taste with the smooth finish of butterscotch and sometimes olive oil. It will transform your salad and paste with its robust flavor. It is also great with a little drizzled honey and fresh fruit.
