Aged for at least 12 months, this cow’s milk cheese is produced in the Veneto region in the Italian Dolomites and named after the Piave river. Piave Aged cheese has a buttery taste and a vibrant fruity flavor with grassy undertones and a kick of sharpness. The flavors are similar, but not so bold, and the texture is much smoother without the coarse crystallization of Parmigiano Reggiano. Piave's rich, nutty flavor only increases with age and at 12 months you are guaranteed a full nut experience with an intense fruit flavor and a lingering finish.
Piave Aged cheese is sold at various stages of maturity, but this one is the blue label aged between 6 and 12 months. Excellent as a table cheese or grating cheese or shaved onto arugula salad! Also pairs well with Red wines like Barbera, Chianti, etc.
We hand-cut and wrap Piave in wedges of 8 ounces and 1 pound. You can also by an entire wheel of approx. 13 pounds.
