This semi-firm Ricotta Salata cheese is the result of processing cow's milk in the style that would usually produce Ricotta fresh cheese, except the cheese is then hung and dried until it has a dry, firm texture and the flavor solidifies into a tangy, yet pleasantly creamy and well balanced. Creat cubed over salads or in antipasti with marinated olives and chopped onions, this cheese is also excellent crumbled over pastas, and provides a strong, salty contrast that has more depth than a traditional grated pasta cheese.
We hand-cut and wrap this cheese in wedges of 1 pound and 8 ounces, or you can order by the wheel, which is approximately 7 pounds.
