This incredible Salchichon from Fermin is made with Iberico pork meat, considered to be the finest in the world. The pigs are allowed to forage for Acorns and nuts and feast on them free range until they are double their weight. This Salchichon, or Spanish sausage is similar to chorizo, but without the spice or peppers, but instead showcases the incredible pork with a simple seasoning blend of nutmeg, and black and white peppers. Cured for 40 days, and then thin sliced for your enjoyment.
