This semi-soft Spanish cheese has some textural similarities with a Manchego, but that's about it. Ponce de Leon's Chili Chego is a mixed milk cheese, using cow, sheep, and goat's milk.
It's infused with red chili, creating striking red color of the rind as well as in the paste, like red veins. The infusion of chili ensures that every bite has a spicy kick.
A wonderful table cheese if you like some heat. Serve it on a cheese board along side charcuterie, fresh fruit and crusty baked bread.
