Vino Cabra, Cabra al Vino, Murcia al Vino or drunken goat; many names for similar cheeses, all cheeses bathed in red wine. There is only one with wine piercings and that is the Vino Cabra.
A Spanish semi-firm, goat's milk cheese with a white-pale interior and a purple inedible rind. The red wine gives it a tangy edge, and a stark contrast. The overall flavor is delicate and creamy with a subtle fruit of red wine.
Beautiful on a cheese plate, and a definite crowd pleaser. Pair with a bold Spanish red, such as Rioja, and figs.
Ingredients:pasteurized goat's milk, red wine, salt, rennet, calcium chloride (stabilizer), egg lysozyme (preservative), cheese cultures. On inedible rind: red wine, natamycin (preservative).
