This farmstead caramel (the traditional Mexican confection known as Cajeta) is a unique and decadent sauce made from reducing goat’s milk with sugar until it forms a caramel. Goat milk caramel is the same thing with the exception that instead of cow's milk, goat milk is combined with sugar. Compared to cow's milk, our goat's milk caramel is uniquely stable, able to endure high heat without scorching. It tastes very similar to dulce de leche, but because it's made with primarily goat’s milk and not cow’s milk it has a slight tangy taste to the rich sauce.
